Running anemoi-inference on bris checkpoints

TODO: old checkpoint depends on "torch-geometric==2.4.0". New one cannot use that one. Fix in pyproject.

./download_checkpoints.sh
uv run anemoi-inference run malawi.yaml

...or adapt pyproject.toml, and run with malawi_old.yaml.

Mac-specific

export ANEMOI_INFERENCE_NUM_CHUNKS=2

...makes both new and old checkpoint run without generating NaN.
