General Changes

Removed gelato dependency since relayer wasn't being used anymore
Refactored cypress test setup to just use fetch and removed axios dependency
Fixed broken cypress tests and did some overall cleanup of test setup
Removed jest tests and related dependencies since these were outdated and not being maintained
