Work to improve defconfig situation upstream

Per discussions among the team it'd be nice to have more sensible defconfigs upstream as a goal of the kernel-packages effort here at the OGC. This would include:

* Helping bring distro configs up to modern standards.
* Having a "gaming" defconfig available upstream that enables everything needed to have a good gaming experience.
